I’ve said this before but the combination of chocolate and peanut butter is a blissful thing.  Smother it between two layers of brownie and OH MY!!!

These brownies are wonderfully chocolaty, with big chunks of peanut butter cups, and the ooey-gooey mallow topping makes me feel like a kid again.  Be careful when you broil the marshmallows because they will burn quickly if left unattended.  I stepped away for what seemed like a minute, when I turned around and opened the door smoke started rolling out.  oops!  This would also be a great recipe to have the kids help make for a Valentine’s Day gift!!

Peanut Butter Cup Smore Brownies

Recipe adapted from Eat,Live,Run

Ingredients

  • 1/2 cup all purpose flour
  • 1 cup sugar
  • 1/2 tsp salt
  • 1/4 cup cocoa
  • 4 oz butter
  • 8 oz semi-sweet chocolate chips
  • 3 eggs
  • 1 tsp vanilla extract
  • 2 cups mini marshmallows
  • 25-30 mini peanut butter cups

1.  Preheat oven to 350 degrees.

2.  Melt the chocolate and butter together over very low heat on the stove. Remove and whisk in the eggs. Add the flour, cocoa, salt and sugar and mix well to combine.

3.  Line a 9×13 inch baking pan with foil. Butter the foil and then pour half of the brownie batter in the pan. Arrange peanut butter cups over top and then spread the remaining batter over top, smoothing it out with a spatula.

4.  Bake for 45 minutes and then sprinkle marshmallows over the top. Broil for two to five more minutes, until the marshmallows are lightly browned and gooey.  Watch the marshmallows cause they will turn quickly!

5.  Let cool for AT LEAST an HOUR before attempting to cut. And when you do cut, spray your knife with cooking spray or else the marshmallows will stick to it. Cutting these can be tricky but don’t give up.  They are well worth all the stickiness and knife cleaning after each cut.
