I must have been hiding under a rock for quite sometime because I just discovered Sarah’s (Mama Pea) blog a few months ago. Yes, you read that correctly. I’m not sure how or why it took so long, but I have been bookmarking her recipes like crazy making up for lost time! As much as I love baking, I am a very timid cook. I don’t do a lot of experimenting with flavors or combinations and when I do, it’s usually a flop. So when I saw that she was coming out with a cookbook, to say that I was excited would be an under statement. Soooo…….why not share that excitement with you all!! Ah so intrigued about this cookbook! Even though I’m not a vegetarian, I think it’s vital to educate ourselves with different alternatives to meat. I’ve mad a vegan mac + cheese before, It’s amazing how the combination of a few ingredients can make such a creamy sauce, with no dairy!

My go to meal for a dinner party would be an enchilada casserole I make with soy chorizo from Trader Joes. It’s fabulous! Everyone loves it!

My go-to appetizer is always hummus & salsa & chips. I also love making bean soups as a starter. Spinach makes a huge difference in entree dishes – so a dinner made and centered around spinach are amazing. We “go vegetarian” at least once a week to encourage healthy eating (although we love our meats too much to give them up)
My go-to meatless appetizers are guacamole, goat cheese marinara dip, or spinach / artichoke dip with Stacy’s pita chips. I’m not a vegetarian (my hubby loves meat too much), but find that my husband will take a vegetarian meal when it’s “meaty” like eggplant parmesan. yum!
